ACE [Anguilla Culinary Experience] in Anguilla invites guests to experience dining in its most evocative and immersive form with a curated Five Senses Dinner at iconic Malliouhana, a Storey Hospitality property. Set high above the Caribbean Sea, the intimate evening reimagines gastronomy as a fully layered sensory journey, one where cuisine, atmosphere, storytelling, and thoughtfully paired beverages come together to engage sight, sound, scent, taste, and touch.

Led by celebrity chefs Kerth Gumbs and Wilson Macedo, the experience unfolds as a progressive tasting menu in which each course is paired with a bespoke beverage selection crafted to mirror, heighten, or contrast the flavors on the plate. From wines and spirits to innovative cocktails and non?alcoholic pairings, the beverages are designed as an essential component of the narrative, extending the sensory impact beyond food alone.

The Five Senses Dinner moves beyond traditional fine dining, transforming the meal into a curated encounter with place.

Sight is activated through artful plating, sculptural table design, and the sweeping natural drama of Malliouhana’s clifftop setting as daylight fades into evening. Each visual moment sets the tone for what follows, preparing guests for a carefully paced journey.

Sound becomes a deliberate layer of the experience, with curated musical elements, ambient rhythms, and the natural cadence of the sea woven together to reflect the mood of each course. The progression of sound mirrors the menu’s evolution, subtly guiding guests through moments of energy, calm, and reflection.

Scent plays a powerful role throughout the evening, introduced through aromatic accents tied to both cuisine and beverage pairings. Notes inspired by Anguilla’s indigenous botanicals, spices, and coastal environment stimulate memory and anticipation before each course arrives, deepening the emotional connection to the flavors that follow.

Touch is explored through texture, both on and off the plate. From tactile tablescape elements and custom service pieces to the contrasting mouthfeels within each dish and paired beverage, guests are invited to engage physically and remain present with every detail.

At the heart of the experience lies taste, elevated through a harmonious dialogue between cuisine and drink. Locally sourced ingredients, modern Caribbean techniques, and global influences shine through layered flavors that evolve across the menu. The curated beverage pairings enhance each course, whether by amplifying key notes, offering balance and freshness, or introducing unexpected contrasts that expand the palate.

Storytelling moments woven between courses provide insight into the inspiration behind each dish and pairing, offering a deeper understanding of Anguilla’s culinary identity while highlighting the chefs’ creative vision and technical mastery.

Hosted at Malliouhana, one of Anguilla’s most storied destinations, the evening reflects the property’s role as a cultural and lifestyle anchor on the island. As a Storey Hospitality property, Malliouhana continues to champion experiences that are elevated yet authentic, placing creativity, craftsmanship, and connection at the center of luxury.

“Dining is about far more than food alone,” said a representative of the resort. “With the Five Senses Dinner, Chefs Kerth Gumbs and Wilson Macedo invite guests to experience Anguilla through flavor, fragrance, sound, texture, and through beverages that complete each moment of the journey.”

With limited seating, the Five Senses Dinner offers an intimate and unforgettable way to engage with ACE in Anguilla, the island’s signature celebration of Food, Art, Culture, and Experience. The evening stands as a testament to Anguilla’s culinary sophistication and its ability to deliver experiences that resonate long after the final course and final sip.
