Under the leadership of Executive Chef Abram Bissell, the diverse restaurants and bars across the property will showcase ingredient-focused menus that will bring the playful nature of island dishes to life in new and exciting ways.
Aurora Anguilla will be a culinary destination offering a unique sense of place with menus informed by the magnificent Caribbean landscape, Anguilla’s culinary heritage and Chef Abram’s passions and experience. Ideally tucked in the center of Aurora Anguilla, Kitchen Table will be anchored by the resort’s open kitchen and wood-burning oven. From sunrise to well beyond sunset, the restaurant will be a gathering place where visitors will enjoy fresh-baked goods, artisanal flatbreads, offerings from the garden, and more. Set on the white sands of Rendezvous Bay, Eventide will celebrate cuisine that is pure and refined. Anguillian culture, Caribbean flavors and freshly caught seafood will blend in harmony to celebrate the sea in a sophisticated setting. Reminiscent of carefree summer afternoons, Breezes will highlight Caribbean interpretations on iconic favorites from lobster rolls to fish tacos, all paired with refreshing beer and tiki-inspired cocktails. On weekends, live music and the relaxed atmosphere will promise an oasis of effortless fun on the beach. Marella, inspired by the azure waters of the Caribbean and the Mediterranean, will showcase ingredient-driven, soulful cuisine including handmade pastas and elegant crudos. Nestled within Aurora International Golf Club, D Richard’s will serve timeless classics with Anguillian flair. It will be the ideal place to unwind and refuel between rounds of golf or to simply revel in afternoons of leisure with friends. In the evening, the restaurant, inspired by the classic chophouse, will showcase expertly-roasted steak, freshly caught seafood and an extensive wine list.
A defining element of the resort’s food and beverage offerings comes from the Hydroponic Farm. With a broad range of herbs, vegetables and fruits from the orchard, Chef Abram and his team will be inspired each morning by the daily harvest. Additionally, the team will be curating a hot sauce program inspired not only by Anguilla, but also the incredible range of hot sauces found throughout the Caribbean, inviting guests to discover an incredible breadth of flavors and spices. Guests will also have the opportunity to take tours throughout the Hydroponic Farm to learn more about the range of seasonal produce, their distinct flavor profiles, and how they are showcased in Anguillian cooking. Ensuring a complete sustainable cycle, a composting program will be used to feed the gardens and orchards. Chef Abram and his team have also developed a relationship with the local fishermen, promising the very best catch-of-the-day-fare.
Prior to relocating to Anguilla, Chef Abram Bissell spent many years as a celebrated chef in New York City, where he led the kitchens of The Modern and Eleven Madison Park, where he earned two- and three- Michelin stars respectively. Since arriving in the Caribbean, Abram has immersed himself in island life, finding inspiration in the traditions, the stories and the flavors of island cuisine.
