One of the most critical and challenging aspect for cooking in an Institution or Hospital setting is; preparing delicious, nourishing foods with the use of very limited or no fats, sugar, and salt on a budget. Though these nutrients mentioned occur naturally in foods, an abuse from overconsumption worldwide has triggered an explosion of uncontrolled, chronic diet-related diseases such as: obesity, hypertension diabetes, and, renal disease, which often require treatment in a Hospital setting.
In an effort to restore the pleasure of eating healthy delicious foods and meals for the clients of the Princess Alexandra Hospital; the staff at the Dietary Unit / Nutrition and Health Promotion Department at the Health Authority of Anguilla, collaborated with the Anguilla Community College; to conduct a profoundly educational, practical food demonstration training session on November 6th to 7th 2018.
These sessions were conducted under the esteemed auspices of Mrs. Karimah Carty (Chef detartie/ Lecturer). During the training Mrs. Carty expertly and professionally demonstrated some critical culinary techniques such as: deboning, stuffing, pan searing, baking and sauce making; to transform ordinary foods into epicurean delicacies without compromising their nutritive value. All staff in attendance was able to demonstrate the learning objectives and expressed their satisfaction with the outcome of the training.
This training was conducted as part of an ongoing objective to improve the Dietary Meal Services offered at the Princess Alexandra Hospital in congruence with our vision; “To be the first choice for health care, through dedication to excellence.” Likewise these items will be included on our cycle menu offered at the Hospital in the near future. Items prepared were: Spinach Stuffed Pan-Seared Chicken Breast, Pan Seared Fish Fillet, Salmon Burgers, Garlic Roasted Potatoes, Mashed Cauliflower Cream of Broccoli Soup, and Curried Pasta Salad.
