Minister of Home Affairs, Honourable Jerome Roberts donated the book ‘Table Manners – A Culinary Review of Hospitality in Antigua & Barbuda’ by Gulliver Johnson and Janie Conley which was presented to him at the OECS Authorities Meeting in Antigua in early June.
The book is a compilation of popular Antiguan & Barbudan dishes and beverage recipes, such as their national dish Pepperpot and Fungi, Ducana with Saltfish and Chop-up. It also includes the impact of other cultures on the cuisine through various fusion dishes. The books also highlights the numerous culinary festivals that can be found on the island.
Mr. Roberts stated that he felt the book would be more beneficial to the Food and Beverage students, than it would be on his wall unit and commended students for seeking to improve their skills by enrolling in the college’s culinary courses. Mr. Karimah Carty, Chef de Partie/Trainer, thanked Mr. Roberts for his generous donation and expressed a desire to have Anguilla develop a book of this calibre. The students were intrigued by the offering of the book and anxious to try some of the recipes.
